Ingredients

  • 2 pounds beef chuck roast, cut into chunks
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth

  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sear beef chunks until browned on all sides. Remove and set aside.
  3. Sauté onion and garlic until fragrant.
  4. Add tomato paste and cook for another minute.
  5. Return beef to pot, add carrots, potatoes, thyme, bay leaf, salt, and pepper.
  6. Pour in beef broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 2-3 hours until beef is tender.
