- 2 pounds beef chuck roast, cut into chunks
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef chunks until browned on all sides. Remove and set aside.
- Sauté onion and garlic until fragrant.
- Add tomato paste and cook for another minute.
- Return beef to pot, add carrots, potatoes, thyme, bay leaf, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat, cover, and simmer for 2-3 hours until beef is tender.
Notes
- For richer flavor, cook in a slow cooker on low for 6-8 hours.
- Adjust seasoning to taste before serving.
