Ingredients

  • 4 large russet potatoes, peeled and sliced
  • 2 large onions, thinly sliced
  • 2 cups shredded Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 2 teaspoons sugar
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, thyme, salt, and pepper. Cook until caramelized, about 20 minutes.
  3. Meanwhile, cook potato slices in boiling water for 5 minutes. Drain and set aside.
  4. Layer half of the potato slices in the dish, followed by half of the caramelized onions, and sprinkle with cheese. Repeat layers.
  5. Cover with foil and bake for 35 minutes. Remove foil and bake an additional 10 minutes until golden and bubbly.

Notes

For extra flavor, add a dash of Worcestershire sauce or a sprinkle of fresh herbs before serving.
