Ingredients

  • 1 package (9 oz) cheese tortellini
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup chopped kale or spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage, cook until browned, then remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant and translucent.
  3. Add chicken broth and diced tomatoes; bring to a boil.
  4. Reduce heat, add cooked sausage, kale, and tortellini, simmer until tortellini is tender (about 10 minutes).
  5. Season with salt and pepper, garnish with fresh herbs before serving.
