- 1 lb sausage (Italian or your choice)
- 1 package (9 oz) cheese tortellini
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup chopped kale or spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage, cook until browned, then remove and set aside.
- In the same pot, sauté onions and garlic until fragrant and translucent.
- Add chicken broth and diced tomatoes; bring to a boil.
- Reduce heat, add cooked sausage, kale, and tortellini, simmer until tortellini is tender (about 10 minutes).
- Season with salt and pepper, garnish with fresh herbs before serving.
Notes
- You can substitute kale with spinach or Swiss chard.
- For a spicier version, add red pepper flakes.
- This soup can be made ahead and reheated easily.
