- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 package (16 oz) potato gnocchi
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent.
- Add chicken broth and bring to a simmer.
- Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Cook gnocchi in the broth until tender, about 3-4 minutes.
- Return bacon to the soup, season with salt and pepper, and serve hot, garnished with parsley.
Notes
- For extra flavor, add a pinch of red pepper flakes or a splash of hot sauce.
- Use freshly shredded cheddar for the best meltability.
