- 1 pound butternut squash, peeled and cubed
- 1 cup all-purpose flour
- 1 egg
- Salt and pepper to taste
- 1 pound sausage slices
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- Fresh sage or herbs for garnish
Instructions
- Roast or boil butternut squash until tender.
- Mash squash and let cool slightly.
- Mix squash, flour, egg, salt, and pepper to form dough.
- Shape dough into gnocchi and boil until they float, then drain.
- In a skillet, cook sausage slices until browned.
- Add gnocchi to the skillet, sauté briefly with sausage.
- Stir in Parmesan cheese and herbs, serve hot.
Notes
For extra richness, add a splash of cream. Can substitute with turkey sausage for a lighter option.
