Instructions

  1. Roast or boil butternut squash until tender.
  2. Mash squash and let cool slightly.
  3. Mix squash, flour, egg, salt, and pepper to form dough.
  4. Shape dough into gnocchi and boil until they float, then drain.
  5. In a skillet, cook sausage slices until browned.
  6. Add gnocchi to the skillet, sauté briefly with sausage.
  7. Stir in Parmesan cheese and herbs, serve hot.
