- 1 pound Italian sausage
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 (9-ounce) package refrigerated tortellini
- 1 cup chopped spinach
- 1 cup shredded Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet, cook sausage until browned, then transfer to the crockpot.
- Add chopped onion and garlic to the skillet, cook until fragrant, then add to the crockpot.
- Pour in chicken broth and season with Italian seasoning, salt, and pepper.
- Cook on low for 4-6 hours.
- Add tortellini and spinach during the last 30 minutes of cooking.
- Serve hot, topped with Parmesan cheese.
Notes
- You can substitute spinach with kale or zucchini for variation.
- For creamier soup, stir in a splash of heavy cream before serving.
