A hearty, creamy Italian sausage soup loaded with tender sausage, fresh vegetables, and Parmesan cheese, perfect for a comforting meal.

Ingredients

  • 1 pound Italian sausage links, casing removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
  3. Add garlic and Italian seasoning; cook for 1 minute.
  4. Return sausage to the pot, add chicken broth, and bring to a simmer. Cook for 10 minutes.
