- 1 pound Italian sausage links, casing removed
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, add onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
- Add garlic and Italian seasoning; cook for 1 minute.
- Return sausage to the pot, add chicken broth, and bring to a simmer. Cook for 10 minutes. <li id="instruction-step-5"-Stir in heavy cream and Parmesan cheese; cook until heated through. Season with salt and pepper.
- Serve hot, garnished with extra Parmesan and fresh herbs if desired.
