- 8 ounces pasta (penne or spaghetti)
- 2 cups fresh spinach, chopped
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook pasta in salted boiling water until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until browned, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in heavy cream and bring to a gentle simmer.
- Add grated Parmesan cheese and stir until melted and smooth.
- Fold in chopped spinach and cook until wilted, about 2 minutes.
- Mix in cooked pasta, season with salt and pepper, and toss to coat evenly.
- Garnish with chopped parsley before serving.
Notes
- You can substitute heavy cream with Greek yogurt for a lighter version.
- For added protein, sprinkle with cooked chicken or shrimp.
