- 2 tablespoons butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups cooked corned beef, shredded
- 1 cup sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt butter over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add beef broth and bring to a simmer.
- Stir in shredded corned beef and sauerkraut, cook for 10 minutes to meld flavors.
- Reduce heat and add shredded Swiss cheese, stirring until melted and smooth.
- Slowly pour in heavy cream, stirring constantly. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- You can substitute the heavy cream with Greek yogurt for a lighter version.
- Best served with crusty rye bread or garlic croutons.
