Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, beat butter and brown sugar until creamy. Add egg, vanilla, and apple cider, mixing well.
- Gradually add dry ingredients to wet ingredients until combined.
- Scoop spoonfuls of batter onto prepared baking sheets, spacing them apart.
- Bake for 10-12 minutes or until edges are golden. Cool completely.
- Prepare frosting by mixing softened butter, powdered sugar, cinnamon, and a splash of apple cider until smooth.
- Spread frosting between two cookies to assemble whoopie pies. Serve and enjoy!

- You can substitute apple cider with apple juice for a milder flavor.
- Chill the frosting before piping for cleaner spreading.
