- 1 pound (450g) boneless, skinless chicken breasts or thighs
- 20 oz (567g) cheese tortellini
- 4 cups (960ml) chicken broth
- 1 cup (240ml) heavy cream
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (50g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place chicken breasts in the crockpot, season with salt, pepper, and Italian seasoning.
- Pour chicken broth over the chicken, cover, and cook on low for 4-6 hours until tender.
- Remove chicken, shred with two forks, and return to the crockpot.
- Add minced garlic, heavy cream, and tortellini to the crockpot.
- Stir to combine, cover, and cook on high for 20-25 minutes until tortellini is tender.
- Sprinkle mozzarella and Parmesan cheeses on top, cover, and cook until cheeses melt, about 5 minutes.
- Garnish with fresh basil before serving.

- Can substitute chicken with cooked sausage or turkey.
