Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 teaspoons thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or cauldron over medium-high heat.
  2. Add beef chunks and brown on all sides, then remove and set aside.
  3. Sauté onion and garlic until fragrant.
  4. Return beef to the pot, add carrots, potatoes, broth, wine, thyme, bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce heat to simmer, cover, and cook for 2 hours until beef is tender.
  6. Remove bay leaves, check seasoning, and serve hot in mugs or bowls.
