- 2 lbs beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 teaspoons thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or cauldron over medium-high heat.
- Add beef chunks and brown on all sides, then remove and set aside.
- Sauté onion and garlic until fragrant.
- Return beef to the pot, add carrots, potatoes, broth, wine, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat to simmer, cover, and cook for 2 hours until beef is tender.
- Remove bay leaves, check seasoning, and serve hot in mugs or bowls.
Notes
- For extra flavor, add a splash of Worcestershire sauce or a dash of smoked paprika.
- Enjoy with crusty bread for a complete meal.
