- 1 lb boneless skinless chicken breasts, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 onion, sliced
- 2 tbsp fajita seasoning
- 2 tbsp olive oil
- 1 cup cooked rice or quinoa
- 1 cup shredded cheddar or Mexican blend cheese
- Fresh cilantro, chopped
- Lime wedges
- Optional toppings: sour cream, salsa, sliced jalapenos
Instructions
- Season chicken slices with fajita seasoning.
- Heat 1 tbsp olive oil in a skillet over medium heat and cook chicken until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil and sauté bell peppers and onions until tender, about 5 minutes.
- Assemble bowls by layering cooked rice, seasoned chicken, sautéed peppers and onions, and cheese.
- Garnish with cilantro, lime wedges, and optional toppings. Serve warm.
Notes
For a healthier version, use brown rice or cauliflower rice. Adjust spice levels with more fajita seasoning or hot sauce. For extra flavor, marinate chicken with lime juice and spices ahead of cooking.
