Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, cold and cubed
  • 4-5 tablespoons ice water
  • 5 large tart apples, sliced
  • 3/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, combine flour, salt, and sugar. Add cold butter and cut in with a pastry blender until mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time until dough comes together. Divide into two discs, wrap, and chill for 30 minutes.
  3. Preheat oven to 425°F (220°C). Roll out one disc on a floured surface and fit into a pie plate.
  4. In a bowl, toss sliced apples with sugar, cinnamon, nutmeg, and lemon juice. Pour into the crust.
  5. Roll out the second disc and place over filling. Trim edges and crimp. Cut small slits on top to vent.
  6. Bake for 45-50 minutes or until golden brown. Cool before serving.
