Instructions
- Heat a large pot over medium heat and sauté onions and garlic until translucent.
- Add carrots, celery, and zucchini, cooking until vegetables are tender.
- Pour in chicken broth and diced tomatoes, bringing to a boil.
- Reduce heat and add shredded chicken and Italian seasoning.
- Simmer for 20 minutes, season with salt and pepper.
- Garnish with parsley before serving hot.
