- 8 oz of pasta (penne or spaghetti)
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until slightly softened, about 2-3 minutes.
- Stir in chopped spinach and cook until wilted.
- Add cooked pasta to the skillet, toss to combine, and season with salt and pepper.
- Sprinkle with grated Parmesan cheese and serve hot.
Notes
Feel free to add red pepper flakes for spice or switch Parmesan with vegan cheese for a dairy-free option.
