- 2 lbs beef stew meat, cubed
- 4 large potatoes, diced
- 3 carrots, sliced
- 1 cup frozen peas
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a skillet over medium heat and brown the beef cubes.
- Add beef, potatoes, carrots, onion, garlic, salt, pepper, and thyme into the slow cooker.
- Pour in beef broth and stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef and vegetables are tender.
- Stir in frozen peas during the last 30 minutes of cooking.

- Serve hot with crusty bread for a complete meal.
