- 2 pounds beef stew meat, cut into chunks
- 4 carrots, sliced
- 3 potatoes, cubed
- 1 cup green beans
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Place beef chunks in the crockpot and season with salt, pepper, thyme, and rosemary.
- Add carrots, potatoes, onion, and garlic around the beef.
- Pour in beef broth and stir in tomato paste.
- Cover and cook on low for 8 hours or high for 4 hours.
- In the last 30 minutes, add green beans and cook until tender.
- Serve hot garnished with fresh herbs.

- You can add peas or mushrooms for extra flavor.
