- 1 pound Italian sausage or ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 24 ounces marinara sauce
- 4 cups beef or chicken broth
- 1 cup small pasta (penne or orzo)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Brown the meat in a skillet and drain excess fat.
- Add meat, onion, garlic, marinara sauce, and broth to the crockpot.
- Cover and cook on low for 6-8 hours.
- Stir in pasta during the last 30 minutes of cooking.
- Spoon soup into bowls and top with ricotta, mozzarella, Parmesan, and basil. Serve hot.
