- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 (14.5 oz) can diced tomatoes
- 1 cup cooked pasta (penne or fusilli)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Fresh basil, chopped (for garnish)
- Salt and pepper to taste
Instructions
- In a large pot, cook ground beef or turkey over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until fragrant and translucent.
- Pour in broth and diced tomatoes; bring to a boil.
- Reduce heat, add Italian seasoning, salt, and pepper; simmer for 15 minutes.
- Add cooked pasta; stir well and cook for another 5 minutes.
- Ladle soup into bowls, dollop ricotta, sprinkle mozzarella, and garnish with fresh basil.

- You can substitute ground turkey for a leaner option.
- Add crushed red pepper flakes for extra spice.
