Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottoms of each liner to form crusts.
- Cream the softened cream cheese and sugar until smooth. Add vanilla and mix well.
- Add eggs one at a time, blending after each. Mix in sour cream until smooth.
- Divide the filling evenly among the crusts. Bake for 18-20 minutes or until set.
- Cool to room temperature, then refrigerate for at least 2 hours before serving. Add toppings as desired.
