Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5 minutes.
- Add onions, carrots, and celery. Sauté until vegetables soften, about 7 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in chicken broth, add thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 30 minutes, until flavors meld.
- Garnish with fresh parsley before serving.
