  • 2 lbs boneless skinless chicken breasts
  • 1 large yellow onion, sliced
  • 3 cups chicken broth
  • 1 ½ cups orzo pasta
  • 1 cup shredded Swiss or Gruyere cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium heat. Add onion slices and cook until caramelized, about 15 minutes. Add garlic and cook for 1 minute.
  3. In a baking dish, layer chicken breasts, then pour caramelized onions and garlic over chicken.
  4. In a separate pot, bring chicken broth to a boil. Add orzo, cook until al dente, then drain.
  5. Mix cooked orzo into the skillet with onions and chicken, season with salt and pepper. Top with shredded cheese.
  6. Bake uncovered for 25-30 minutes until bubbly and cheese is golden. Garnish with herbs before serving.
