- 2 lbs boneless skinless chicken breasts
- 1 large yellow onion, sliced
- 3 cups chicken broth
- 1 ½ cups orzo pasta
- 1 cup shredded Swiss or Gruyere cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh thyme or parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add onion slices and cook until caramelized, about 15 minutes. Add garlic and cook for 1 minute.
- In a baking dish, layer chicken breasts, then pour caramelized onions and garlic over chicken.
- In a separate pot, bring chicken broth to a boil. Add orzo, cook until al dente, then drain.
- Mix cooked orzo into the skillet with onions and chicken, season with salt and pepper. Top with shredded cheese.
- Bake uncovered for 25-30 minutes until bubbly and cheese is golden. Garnish with herbs before serving.

- You can substitute Swiss cheese with Gruyere or a blend of cheese for extra flavor.
