- 1.5 lbs beef sirloin, cut into bite-sized pieces
- 4 large potatoes, diced
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- In a skillet, melt butter and sauté garlic until fragrant.
- Add beef pieces to the skillet, season with salt and pepper, and brown on all sides.
- Transfer beef and garlic butter to slow cooker.
- Place diced potatoes around the beef in the slow cooker.
- Cook on low for 6-8 hours until beef is tender.
- Garnish with chopped parsley before serving.
Notes
Ensure beef is browned before slow cooking for added flavor. Serve with fresh bread or a side salad for a complete meal.
