- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1 large egg
- 1/4 cup cooked bacon or sausage crumbles (optional)
- Syrup for serving
Instructions
- Preheat oven to 375°F (190°C). Line a mini muffin tin with paper or silicone liners.
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- In a separate bowl, whisk buttermilk and egg until combined.
- Combine wet and dry ingredients until just mixed. Fold in bacon or sausage if using.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 12-15 minutes until golden and fluffy.
- Allow to cool slightly, drizzle with syrup, and serve warm.
Notes
- Adjust sweetness by adding more or less sugar.
- For a vegan version, substitute buttermilk with plant-based milk and use vegan sausage.
- These bites are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
