- 2 large sweet potatoes

- 2 tablespoons honey

Instructions
- Preheat oven to 400°F (200°C).
- Slice sweet potatoes into 1/4 inch rounds.
- Brush with olive oil and season with salt and pepper.
- Arrange on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until tender and golden.
- Top each round with feta cheese and return to oven for 5 minutes.
- Remove from oven, drizzle with honey, and garnish with herbs.
