Instructions
- Place chicken breasts in the slow cooker.
- In a bowl, mix coconut milk, lime juice, lime zest, garlic, ginger, honey, salt, and pepper.
- Pour sauce over chicken.
- Cook on low for 6 hours or until chicken is tender.
- Garnish with shredded coconut and cilantro before serving.

Use fresh lime for a more vibrant flavor. Serve with rice or vegetables for a complete meal.
