- 2 lbs beef stew meat, cut into chunks
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Place all ingredients into the crockpot.
- Cook on low for 8-10 hours or on high for 4-6 hours until beef is tender.
- Stir occasionally and adjust seasoning as needed.
Notes
Feel free to add other vegetables like peas or green beans for variation. For a thicker stew, mash some potatoes before serving.
