Ingredients
Scale
- 2 large apples (preferably Granny Smith or Fuji), peeled and diced
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 1/2 cup milk (dairy or plant-based)
- 1 large egg
- 1 tsp vanilla extract
- Cooking spray or a light coating of oil
Instructions
- Peel, core, and dice the apples into small pieces. Toss the diced apples with a tablespoon of flour to prevent sinking during cooking.
- In a large bowl, whisk together remaining flour, sugar, baking powder, cinnamon, and nutmeg. Add the milk, egg, and vanilla extract; stir until smooth. Gently fold in the prepared apples.
- Preheat your air fryer to 375°F (190°C) for about 3 minutes. Lightly spray the air fryer basket with cooking spray.
- Spoon the batter into small rounds and place them in the air fryer basket. Lightly spray the tops with cooking spray or brush with oil.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy on the outside. Serve warm.
Notes
- Using crispy and tart apples like Granny Smith enhances flavor.
- To make these gluten-free, substitute all-purpose flour with a gluten-free flour blend.
- For extra crispiness, lightly spray with oil before cooking.
- Can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month.
