Instructions
- Preheat your oven to 350°F (175°C). Line a baking pan with parchment paper.
- In a large mixing bowl, whisk melted butter and sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract, lemon juice, and lemon zest.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Add dry ingredients to wet mixture gradually, mixing until just combined.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely, then dust with powdered sugar before serving.
Notes
- For a more intense lemon flavor, add extra lemon zest or lemon essence.
- To keep bars moist, store in an airtight container or refrigerate.
- Best enjoyed fresh but can be stored for up to a week.
