  • 1 medium butternut squash, peeled and cubed
  • 1 package store-bought gnocchi
  • 2 sausages, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh sage or parsley for garnish

Instructions

  1. Roast the butternut squash until tender, about 25-30 minutes. Mash or puree until smooth.
  2. Cook the gnocchi according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  4. In the same skillet, add garlic and cook until fragrant. Stir in the mashed butternut squash and heavy cream. Simmer until slightly thickened.
  5. Add cooked gnocchi and sausage back to the skillet. Toss to coat everything in the creamy sauce. Season with salt and pepper.
  6. Serve hot, garnished with fresh herbs.
