- 1 medium butternut squash, peeled and cubed
- 1 package store-bought gnocchi
- 2 sausages, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh sage or parsley for garnish
Instructions
- Roast the butternut squash until tender, about 25-30 minutes. Mash or puree until smooth.
- Cook the gnocchi according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same skillet, add garlic and cook until fragrant. Stir in the mashed butternut squash and heavy cream. Simmer until slightly thickened.
- Add cooked gnocchi and sausage back to the skillet. Toss to coat everything in the creamy sauce. Season with salt and pepper.
- Serve hot, garnished with fresh herbs.
