Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla, and mix well.
- In a separate bowl, whisk together flour, cinnamon, cream of tartar, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Fold in chopped apples.
- In a small bowl, mix sugar and cinnamon for coating.
- Form dough into 1-inch balls, then roll in cinnamon sugar mixture.
- Place on prepared baking sheets about 2 inches apart.
- Bake for 10-12 minutes or until golden brown.
- Cool on wire racks before serving.

- You can substitute fresh apples with dried apple pieces or applesauce for a different texture.
